Perfect Chocolate Chip Cookies
These
perfect cookies are buttery, soft, thick, and full of rich, semi-sweet
chocolate shavings.
Ingredients
- 2 large Eggs
- 1 cup Brown Sugar
- 2 teaspoons Vanilla
- 1 cup Cold Butter (cut into cubes, if you want a slightly thinner cookie...microwave for about 5-8 seconds)
- 3/4 teaspoon Salt
- 1 teaspoon Cornstarch
- 2 3/4 cups Flour (may use all-purpose or 1 cup cake flour and 1 3/4 cups of all-purpose flour)
- 2 - 2 1/2 cups Chocolate Chips (semi-sweet or mix of milk chocolate and semi-sweet)
- 1/2 cup + 2 Tablespoons Sugar
- 3/4 teaspoon Baking Soda
Instructions
First, preheat
the oven to 400 degrees (if you don't cool the dough). Check the temperature of
your oven using an oven thermometer because some ovens heat up. If you think
your oven is hot, preheat the oven to 385 degrees. In a large bowl, combine the
butter with cream, brown sugar and sugar for 4 minutes until light and fluffy.
Then, add
the eggs and vanilla. Mix 1 more minute.
Stir in
flour, cornstarch, baking soda and salt. Mix just until combined. Add the
chocolate chips.
If time
permits, wrap the dough tightly in plastic wrap and refrigerate for 24 hours.
Otherwise, place the cookie dough on baking sheets. I suggest using parchment
paper or Silpat silicone baking sheets on light-colored baking sheets. If you
use dark-colored baking sheets, the bottom of the cookies can quickly brown and
burn. I suggest using light-colored cookie sheets.
Bake 8 to 11
minutes or until edges just start to take on a light golden color.
Remove from
oven and let stand 5 minutes before removing from cookie sheet. Happy Cooking
