EASY FRENCH ONION SOUP
This quick
and easy French onion soup recipe can be ready in no time so that it can be
enjoyed any day of the week.
INGREDIENTS
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 tablespoon olive oil
- 1 whole bay leaf
- 1/2 teaspoon granulated white sugar
- 6 cups beef broth
- 8 slices baguette
- 2 tablespoons all purpose flour
- 1 ounce (1/4 cup) freshly grated Parmesan cheese
- 3 tablespoons butter
- 2 pounds (about 3) yellow onions, thinly sliced
- 4 ounces (1 cup) grated Gruyere cheese
- fresh thyme for garnish, optional
INSTRUCTIONS
First, melt
the butter in a large saucepan or Dutch oven over medium heat. Add olive oil,
onions and sugar. Cook, stirring occasionally, until the onions are soft,
lightly golden and caramelized, about 30 minutes.
Then, add
salt, pepper and flour and cook, stirring, for 1 minute. Stir in the beef broth
and add the bay leaf to the pan. Increase the heat to bring to a boil. Reduce
heat to medium-low and simmer 30 minutes.
Taste the
soup and season with more salt and pepper as needed.
Place the
baguette slices on a baking sheet and grill under the grill for 2 to 3 minutes,
until lightly browned.
Divide soup
into 4 ovenproof bowls. Place 2 baguette slices on each bowl of soup. Sprinkle
with grated Gruyère and Parmesan cheese.
Place the
bowls on a baking sheet with edges and transfer to the oven. Heat under the
grill for 2 to 3 minutes, until the cheese is melted and lightly golden. To
