Classic Apple Fritters Doughnuts






A perfect yeast dough is swirled with cinnamon apples and fried to perfection then dipped in an icing resulting in a delicious apple donut!

Ingredients
Dough:
  • 1 large egg
  • 1/4 tsp vanilla
  • 1/2 cup warm water
  • 1/4 tsp baking powder
  • 1/4 cup + 2 tsp. white sugar
  • 1 tsp salt
  • 2 Tbsp shortening or lard
  • 2 cups + 4-6 Tbsp. bread flour
  • 1 1/2 Tbsp active dry or instant yeast
  • 1/4 tsp mace (can substitute nutmeg)

Filling:
  • 1 Tbsp bread flour
  • 1/4 cup sugar
  • 2 medium tart apples chopped into 1/2-inch pieces
  • 2 tsp freshly squeezed lemon juice
  • 1 Tbsp + 1 tsp. cinnamon

Glaze:
  • 1/4 tsp vanilla
  • 1 1/2 tsp light corn or golden syrup
  • 1 Tbsp white sugar
  • 1/3 cup water
  • 1/4 tsp salt
  • 2 cups confectioners/icing sugar

Instructions

For the dough: First, in a large bowl or in the bowl of a stand mixer fitted with the paddle attachment, add the yeast to 1/2 warm water. Add the 2 tsp. sugar, stir and let stand 5 minutes. Meanwhile, in a large bowl, whisk together the flour, 1/4 cup sugar, baking powder, mace and salt. Put aside.

Then, when the yeast is ready, add the shortening, the egg and the vanilla and mix with the paddle attachment on low speed for 1 minute (to break the shortening). Add about 1/3 of the flour mixture and mix until homogeneous. Add a second third of the flour mixture and mix again until homogeneous. Skip to the dough hook and add the rest of the flour mixture. Knead with the hook until all this flour is incorporated. Now start adding flour to 1 tablespoon. increments, until the dough collects, clears the bottom of the bowl and becomes smooth. Knead over medium heat for about 2 minutes more. The dough should be smooth and always a little damp (but not sticky).

Place the dough in an oiled bowl, cover with plastic wrap and set aside to rise until it doubles in volume (about 1 hour).
Meanwhile, make the apple garnish. Place the diced apples, sugar and lemon juice in a pan over medium heat. Cook, stirring often, until all of the liquid has evaporated and the apples are softened, about 5 minutes. Remove to a bowl to cool completely before use.

When the bread is finished, it is first raised, remove it on a lightly floured surface and roll it in a 10 inch x 10 inch square. Sprinkle the apples over half the dough. Sprinkle 1 tsp. cinnamon evenly over the apples, then sprinkle with 1 tsp. flour. Fold the empty side of the dough sideways with the apples. Using a sharp knife or scraper, cut the dough into 1/2 inch wide strips from top to bottom. Repeat cutting 1/2 inch strips from side to side, so that you end up with small pieces of dough. Gather the pieces of dough and cut more, in different directions, until they are in small pieces and mixed evenly with cinnamon / apples / dough, etc.

Using floured hands, roughly shape a log that is 12 inches long x 3 inches wide. Cut the log into 1 inch slices. With each slice, pat roughly on a disc, the size of your palm (use additional flour, if necessary, if your dough is sticky). Place the discs of dough on a baking sheet lined with parchment or floured paper, leaving a few inches of space around each. Repeat with the 12 pieces of dough. Cover with plastic wrap that has been sprayed on the underside with cooking spray and set aside to increase until doubled again, about 30 to 45 minutes.

Meanwhile, prepare the frosting. Add icing sugar, corn syrup, salt and vanilla to a large bowl. Put aside. In a small saucepan, bring the water and white powdered sugar to a boil over high heat, then reduce the heat to medium and simmer for 1 minute. Add this mixture to the bowl with the icing sugar and whisk until all the sugar is incorporated and the mixture is smooth. Put aside.

When the dough is about to cook, heat the oil in a fryer to 370 ° (alternatively, use a deep saucepan and a thermometer to monitor the temperature). Fry each donut until golden brown on the underside (1 1/2 - 2 minutes), flip and fry the other side. (* time and temperature may have to vary. Watch the former carefully to determine when. If they appear to be browning too quickly, lower the temperature slightly). Remove to a cooling rack placed on a baking sheet. While it is still warm enough, dip it in the prepared frosting and put it back in a cooling rack so that it cools completely.
