Blueberry Kolaches






Blueberry Kolaches







This recipe is for a sweet yeast Czech bread kolache with a fresh blueberry filling, garnished with streusel crumbles and pearl sugar.

Ingredients
Dough
  • 2 large eggs
  • 1 (1/4-ounce) package active dry yeast
  • 1 1/4 cups sugar
  • 1 1/2 teaspoons salt
  • 1/2 cup butter (1 stick)
  • 8 1/2 cups all-purpose flour
  • 1/2 cup lukewarm water, 110-115 degrees
  • 2 cups milk

Blueberry Filling
  • 3 tablespoons sugar
  • 1 tablespoon water
  • 2 teaspoons cornstarch
  • 3 cups fresh blueberries

Streusel Topping
  • 3 tablespoons butter
  • 1/3 cup sugar
  • 1/3 cup flour

Instructions

First, place milk in a medium saucepan and heat over medium heat until it begins to steam and forms a skin on top. Do not boil. Let cool 10 to 15 minutes or until it is between 110 and 115 degrees.

Then, dissolve the yeast in lukewarm water and leave to stand for 5 minutes. (Try to time this so that it is ready when the milk reaches the correct temperature.)

Melt the butter in the microwave and let cool for 5 minutes.

In a large bowl, whisk together eggs, sugar, salt and melted butter.

Stir in the cooled milk and yeast mixture.

Add the flour 2 cups at a time, stirring with a wooden spoon. Do not work the dough too much. Once the flour has been mixed, transfer the dough to a large bowl covered with vegetable oil. Loosely cover with plastic wrap and let rise until its size doubles, about 1 to 2 hours.

Punch the dough down, cover with plastic wrap and refrigerate for 4 hours overnight.

After refrigeration, grease a 12 x 17-inch baking sheet with butter or cooking spray.

Fill up. Combine all the topping ingredients in a saucepan and cook over medium heat, stirring frequently until some of the blueberries pop and the topping thickens, about 5 minutes. Let some cool.

Lightly oil your hands and shape the dough into balls of about 2 1/2 inches. 
You should have 20 balls. Place the balls on a baking sheet, spacing 4 aside and 5 at the bottom. With your fingers, make a dent in the middle of each ball for filling. Place about 1 tablespoon of filling in each.

Loosely cover with plastic wrap covered with cooking spray. Let rise until almost double in size, about 1 to 1 1/2 hours.

Preheat the oven to 375 degrees.

In a small bowl, combine the butter, flour and sugar for the streusel. Use your fingers to mix the butter well. Sprinkle over the kolaches and bake for 25 to 30 minutes, until lightly browned.
