MOLTEN CHOCOLATE CAKE
Melted
chocolate lava cakes are the ultimate decadent dessert! The soft chocolate cake
is filled with a warm sticky chocolate center, topped with sweet vanilla ice
cream or whipped cream and finished with optional fresh berries. It is a magic
cake that you will certainly want to keep in your file!
INGREDIENTS
- 2 eggs
- 2 egg yolks
- 1/4 cup white sugar
- Pinch of sea salt (about 1/8 teaspoon)
- 2 tablespoons all purpose, unbleached flour
- 1/2 cup unsalted butter (1 stick)
- 6 ounces bittersweet chocolate*, roughly chopped
INSTRUCTIONS
First, preheat
the oven to 450 ° F. Butter and dust ramekins with a little cocoa powder *. Tap
on any excess powder and place the ramekins on a baking sheet.
Then, in a
bain-marie on simmering water, melt the pieces of butter and chocolate
together, whisking occasionally until smooth.
While the
chocolate and butter melt, beat the eggs, egg yolks, sugar and salt in a medium
bowl on high speed until thickened, slightly frothy and pale.
Quickly stir
in the chocolate and flour mixture into the egg mixture, until the mixture is
smooth.
Pour the
batter into the ramekins. Bake 10 to 12 minutes * until the sides of the cakes
are firm but the centers are still soft.
Remove the
ramekins from the heat and place on a wire rack to cool for 1 minute. Cover
each ramekin with an upside-down dessert plate (or whatever you intend to serve
each cake) and turn carefully. Let each ramekin sit for 10 seconds before
gently unmolding.
