ITALIAN WEDDING COOKIES
Italian
wedding cookies are delicious little bites of butter cookies coated in powdered
sugar with almonds.
Ingredients
- 3 cups all purpose flour
- 3/4 cup ground hazelnuts
- 3/4 cup powdered sugar + more for dusting
- 3/4 cup ground walnuts (or almonds)
- 1.5 cups vegan butter
- 3 tsp vanilla extract (or 1 tsp almond extract)
Instructions
First, preheat
your oven to 325 ”F.
Then, in a
large mixing bowl, combine the butter and 3/4 cup caster sugar until fluffy.
Add the
vanilla extract and gradually add the walnuts and ground hazelnuts. Mix until
homogeneous.
Start adding
the flour little by little until it is mixed.
Prepare your
larger cookie sheet and use a small spoon to form the cookies into rounds, the
size of a golf ball or smaller. You should have about 45 cookies.
Place all
the cookies on the baking sheet without touching each other. Bake in the
preheated oven for 20 minutes.
Remove the
cookies from the oven and let them cool for a few minutes before rolling them
in powdered sugar. Sprinkle powdered sugar on top before serving. Happy Cooking
