Crispy Baked Chicken Wings Recipe

Ingredients
- 2 Tbs vegetable oil
- 1 1/2 Tbs baking powder
- 1/2 tsp freshly ground black pepper
- 5 pounds chicken wings
- 1/2 Tbs kosher salt Or less, see note
Ginger Soy
Glaze:
- 1/4 cup water
- 1 1/2 tsps minced garlic
- 1 1/2 tsp minced ginger
- 1/4 cup honey
- 2 tablespoons low sodium soy sauce Use low sodium or it will be too salty
Instructions
Wing

First, preheat
the oven to 250 ° F. And place on the rack at the lowest setting, and one near
the top.
Then, use a
paper towel to dry the fully thawed wings. It will not work with frozen wings.
Place the
wings in a large bowl or in a ziplock bag. Add baking powder, salt and pepper
and mix to coat. Note: Some have complained that the wings are too salty,
adjust them to your preferences, but remember that salt is necessary to dry the
skin and get crisp wings.
Line a tray
with aluminum foil and place a wire rack inside the baking sheets.
Brush the
grill with vegetable oil or spray with cooking oil. Place the wings on the
baking sheet in a single layer with the skin side up. It will be a tight fit,
use two sheets if necessary.

Bake the
wings at 250 ° C for 30 minutes on the lowest setting of the oven rack, this
will help to make the fat.
After 30
minutes, increase the temperature to 400 degrees and move the wings to the top
of the oven. Cook an additional 45 to 50 minutes until cooked through and the
skin is crisp and the wings are golden. Optional: turn once during cooking

remove the wings from the pan and mix in a bowl to coat with the sauce of
choice
Return to a
baking sheet, bake for 5 to 6 minutes until the frosting is slightly
caramelized.

sauce:
First, bring
all the ingredients to a boil in a small saucepan, stirring to dissolve the
honey. Taste and adjust as desired, such as adding sweetener.
Then, reduce
the heat to low; simmer, stirring occasionally, until reduced to 1/4 cup, 7–8
