Cinnamon Raisin Buns
Homemade
raisin and cinnamon buns, it just makes my house feel so good! A flaky bread
with sweet melted brown sugar and butter, raisins or pecans would be nice.
These are the most popular breakfast rolls… at my house anyway.
Ingredients
For the
bread dough:
- 1/3 cup sugar
- 3 1/2 cups bread flour
- 1 1/2 teaspoons salt
- 1 large egg (at room temperature)
- 1/2 cup cake flour
- 1 tablespoon active dry yeast
- 2/3 cup heavy cream (at room temperature)
- 1 cup milk (plus 1 tablespoon, at room temperature)
To finish
the buns:
- 2 teaspoons cinnamon
- 1/2-2/3 cup raisins
- 1 large egg (beaten with 1 tablespoon water to form an egg wash)
- 2 tablespoons sugar
- 1 tablespoon sugar (dissolved in 1 tablespoon hot water to make a simple syrup)
Instructions
First, start
by making the bread dough. In the bowl of a blender, add the heavy cream, milk,
egg, sugar, cake flour, bread flour, yeast and salt (in this order). Using the
dough hook accessory, turn on the blender to "stir". Leave to act for
15 minutes, occasionally stopping the mixer to push the dough together.
Then, after
15 minutes, the dough is ready to be raised. Cover the bowl with a damp towel
and place in a warm place for 1 hour. The dough will reach 1.5 times its
original size.
Once the bread
dough has risen for an hour, return the dough to the blender and stir for
another 5 minutes to remove air bubbles. Empty the dough on a lightly floured
surface and cut it into 12 equal pieces.
Lay out each
piece in an approximate 8 x 4 inch rectangle. Sprinkle with cinnamon sugar and
sprinkle with some raisins. Roll up in a cigar and cut the cigar in half
lengthwise, leaving one end tied (it will look like a pair of pants). Twist the
two pieces together, then roll everything into a snail shape, folding the ends
under the bun. Spread on a baking sheet, cover with a clean cloth and let rise
for another hour.
Preheat the
oven to 350 degrees F. Brush the leavened buns with the egg wash and bake for 13-15
minutes. Immediately after cooking, brush with simple syrup. Happy Cooking
