Loaded Mashed Potato Cakes
If you have
leftovers of mashed potatoes, you will want to make these mashed potato mash
cakes. A creamy mashed potato is loaded with bacon, cheese, peppers, onions,
then fried for more crispness.
Ingredients
- 1/2 cup diced celery
- 1/3 cup flour
- 2 cloves garlic, minced
- 1 large egg, beaten
- 2 tablespoons butter
- 1 teaspoon yellow mustard
- 1/2 cup diced sweet onion
- 1 cup shredded sharp cheddar cheese
- 5 slices bacon, diced small
- 1 1/4 cup leftover cold mashed potatoes
- 2 tablespoons vegetable oil
- sour cream, for serving
- hot sauce, to taste
- minced fresh chives, for serving
- 1/4 teaspoon black pepper
Instructions
First, Cook
the bacon in a medium skillet over medium-high heat, stirring occasionally, for
5 to 7 minutes. Drain the fat and transfer to a large bowl (reserving for
garnish).
Then, In the
same pan, melt the butter. Add the onion, celery and garlic; sauté until
vegetables are tender, about 5 minutes. Transfer to the bowl with the bacon.
Add mashed
potatoes, cheese, flour, egg, mustard, pepper and a few drops of hot sauce to
the bowl; stir to combine.
Form the
mixture into 8 patties (1/3 cup), about 1 / 2-3 / 4 inches thick.
Heat the oil
in the pan over medium heat. Fry the patties until golden, 2-3 minutes on each
side.
Serve
immediately with a dollop of sour cream, chives and reserved bacon.Happy
