Gingersnap Pumpkin Pie Bites
Pumpkin pie
bites combine a silky pumpkin pie with delicious ginger biscuits to make it
simple and tasty!
Ingredients
For the
gingersnap crust:
- 1/4 cup dark brown sugar
- 4 tablespoons butter, melted
- 2 cups gingersnap cookies, crumbed
For the
Pumpkin filling :
- 2 eggs
- 1/2 teaspoon nutmeg
- 1 can sweetened condensed milk
- 1/8 teaspoon salt
- 1 teaspoon cinnamon
- 1 can (15 oz) pumpkin puree
- 1/4 teaspoon ginger
Instructions
First, Preheat
the oven to 350 ° F.
Then, Line a
sheet of an 8x8 glass dish or a light-colored metal dish with foil (make sure
to cover the sides, you will use it to lift the bites from the dish) or you can
use a silicone dish.
In a bowl,
mix the crushed ginger biscuits, melted butter and dark brown sugar until they
are completely combined.
Press the
mixture evenly into the bottom of the prepared pan.
Bake 10
minutes in preheated oven.
Remove from
oven and let cool completely while you prepare the filling.
In a bowl,
combine sweetened condensed milk, pure pumpkin, eggs, cinnamon, nutmeg, ginger
and salt.
Beat with an
electric mixer until smooth.
Pour the
mixture over the crust of gingers.
Bake in the
center of the oven at 350 degrees for 1 hour.
Let cool for
20 minutes, then cut into bite-sized pieces and serve!
