Blueberry Chia Seed Pudding
This
blueberry and almond pudding from Chia is easy to prepare, rich in fiber,
protein and antioxidants, ideal for a healthy breakfast!
Ingredients
- 1/4 cup fresh blueberries
- 1/4 cup fresh blackberries
- 3 Tablespoons chia seeds
- 1 cup unsweetened non-dairy milk
- 2 Medjool dates, pits removed
- Extra berries for topping
Instructions
First, In a
high speed blender, mix dates, berries and non-dairy milk until smooth.
Then, In a
medium bowl, add the mixer liquid to the chia seeds.
Stir well
and continue to stir every few minutes for about 15 minutes.
Refrigerate
for at least an hour or overnight.
Just before
serving, stir again and garnish with fruit.
