Lemon & Blueberry Blondies!
Blondies
Blueberry Lemon! These are loaded with flavor. They have a ton of blueberry
pieces in a moist, dense cookie, like a brownie. No wonder they are so good.
Ingredients
- 3 Large Eggs
- 250 g Caster Sugar
- Zest of 2 Lemons
- 200 g Blueberries
- 200 g Plain Flour
- 250 g White Chocolate Chips
- 100 g White Chocolate (melted)
- 250 g Unsalted Butter
- Sprinkles
Instructions
First, Preheat
your oven to a 180 ° C / 160 ° C fan, grease and cover a 9 x 9 inch square box
- leave it out for the moment.
Then, Melt
the butter in a microwave or saucepan and mix until smooth. Cool slightly on
the side.
Using an
electric whisk / stand mixer, whisk together the eggs and powdered sugar for 3
to 4 minutes or more, until they are thicker, look like mosses, become more
pale and their volume has almost doubled.
You'll know
it's done when you lift the whip, it will leave a trace on the top of the
mixture for a few seconds before falling back.
Once
whipped, continue to whisk but gradually pour the butter. Do not pour it too
fast or the mixture will split.
Once all
have been incorporated, add the flour and lemon zest and fold them together.
Add the white chocolate chips and half the blueberries and fold again.
Pour into
the mold and sprinkle with remaining blueberries.
Bake for 35
to 45 minutes or until cooked through. Sometimes it may take longer because of
some ovens, and if you have done it quickly enough.
Once cooked,
let cool in the mold.
Once cooled,
remove it from the mold and pour over 100 g of melted chocolate for decoration,
and sprinkle them a little! Let stand and stand in your squares. Happy Cooking
