BUFFALO CHICKEN NACHOS
Buffalo
chicken nachos are an essential match day. I like the football season, only for
food. The sport is excellent, but Buffalo chicken nachos and mini barbecue
sausages are better. These are so easy to make, and they are made with Greek
yogurt so that you feel helpless, indulgent.
INGREDIENTS
- 1/2 cup buffalo sauce
- 1/2 cup ranch dressing
- 1 cup shredded colby jack cheese
- 1 lb chicken breast
- Salt and pepper to taste
- 2-3 green onions sliced
- 1 tbsp olive oil
- 1 bag Corn tortilla chips 10-15 ounces
INSTRUCTIONS
First, Preheat
the oven to 400 degrees F. Line a large baking sheet with aluminum foil
(optional)
Then, In a
large saute pan, heat the olive oil over medium heat. Add chicken, sprinkle
with salt and pepper and cook for about 10-12 minutes until no longer pink.
Remove from pan and shred chicken.
Return the
shredded chicken to the sauté pan and add the buffalo sauce and ran
ch
vinaigrette. Simmer for 1-2 minutes.
On a baking
sheet, add a layer of corn chips. Garnish evenly with grated chicken and grated
cheese. Bake for 5 to 7 minutes, until cheese is melted.
Cover with
green onions and serve hot!
