CREAMY BROCCOLI SOUP
The creamy
of this creamy broccoli soup will give it a much more lenient feeling than it
really is.
Ingredients
- 1 large potato quartered
- 4 cups chicken or vegetable stock
- Salt and freshly ground black pepper
- 1½ pounds fresh broccoli
- 1 large onion chopped
- 2 tablespoons olive oil or low-calorie margarine
- Shredded cheddar cheese or vegan cheese (optional)
Instructions
First, Melt
the margarine in a medium saucepan over medium-high heat. Add the onion and
sauté until the onion is translucent for about 5 minutes.
Then, Add
broccoli, potato, chicken broth, salt and pepper. Bring to a boil.
Reduce heat
and simmer 15 minutes or until vegetables are softened enough to blend.
Remove a cup
of liquid and set aside.
Using a hand
blender, mix the soup to the desired consistency (adding a little broth at a
time if necessary).
Serve hot
garnished with a handful of grated cheddar cheese.
