CINNAMON CREAM CHEESE COOKIES

Cinnamon Cream Cheese Cookies are soft, chewy, and irresistible! Celebrate the holidays with these snickerdoodles that are sure to be a crowd pleaser!

Ingredients

  • 1 egg
  • 4 ounces of softened cream cheese
  • a pinch of kosher salt
  • 1/2 teaspoon of baking powder
  • 1/4 cup granulated sugar
  • 1 and 1/2 cup powdered sugar
  • 1 tablespoon ground cinnamon
  • 1/2 cup unsalted butter (1 stick), softened
  • 1 teaspoon of vanilla bean paste or extract
  • 1 and 3/4 cup all-purpose flour

Instructions

First, in a large bowl, beat together butter and cream cheese with hand mixer until smooth. Slowly add powdered sugar until blended. Add the egg, baking powder, vanilla and salt. Stir to combine. Slowly add flour until completely incorporated, scraping up sides as needed. Put in the refrigerator for an hour to rest.

Then, preheat the oven to 375 degrees. In a small bowl, combine the cinnamon and sugar. Put aside.

Roll the dough into 1-inch balls, about 2 teaspoons of dough. Roll until coated with cinnamon sugar mixture. Place on a baking sheet lined with parchment paper about 2 inches apart.

Bake for 8 to 9 minutes, until set. Don't overcook, it's hard to tell when these cookies are ready, they will puff up but won't turn golden. Let cool on a baking sheet for 10 minutes. Transfer the cookies to a wire rack and let cool completely. Happy Cooking Time.
