Meatball Soup
Rich and hearty, this comforting meatball soup is a fun twist on one of our favorite pasta dishes.
Ingredients
- 6 cups of beef broth
- 1 lb. frozen or homemade meatballs
- ⅔ cup of ditalini or orzo pasta
- 1 tablespoon of olive oil
- 1 teaspoon crushed Italian seasoning
- 2 cups of frozen vegetables
- 1 onion
- 2 cloves garlic
- 28 ounces of undrained diced tomatoes
Instructions
First, in a large saucepan or saucepan, brown the onion and garlic.
Then, add the prepared meatballs and beef broth to the pot and cook 10 min.
Add tomatoes, seasonings, pasta and frozen vegetables. Simmer, covered, 15 minutes or until pasta is cooked. Happy Cooking Time.
