Ham and Eggs Cups




Great idea for kids and just something a little different. Very fast and easy.

INGREDIENTS
  • 12 eggs
  • 1/2 cup diced tomatoes
  • salt and pepper to taste
  • 1/4 cup thinly sliced chives
  • 12 slices ham
  • 1 cup shredded cheddar cheese
  • cooking spray

INSTRUCTIONS

First, preheat the oven to 400 degrees F.

Then, coat 12-cup muffin pan with cooking spray.

Press a slice of ham into each muffin well.

Divide the cheese evenly among the cups.

Crack one egg into each cup, then season with salt and pepper to taste.

Bake for 13 to 15 minutes or until the yolks are at the desired cooking level.

Just before serving, garnish with tomatoes and chives.
