Green Goddess Immune Soup








Green Goddess Immune Soup ~ this nourishing soup is the equivalent in cold weather of your powerful smoothie. It's a vibrant soup filled with everything you need to get through cold and flu season without so much sniffing.

Ingredients
  • ½ teaspoon of Paprika
  • 1 tablespoon of Coconut or Olive Oil
  • 1 head of fresh Broccoli, chopped into forests (about 3 cups)
  • 1 small bunch of Kale, stripped of the thick stem and roughly chopped (about 5 sprigs)
  • ½ teaspoon of ground Cumin
  • 6 cups of Vegetable Stock
  • Salt and Pepper to taste
  • 1 medium sized Onion, diced
  • 1 (5 oz.) bag of Baby Spinach
  • 3 fat cloves of Garlic, minced
  • 2 cups of Full Fat Coconut Milk

Instructions

First, wash broccoli, kale and spinach and set aside

Then, put the instant pot (IP) in "Sauté" mode, add the oil, onions, garlic, cumin and paprika and salt and pepper and sauté for 4 to 5 minutes, until the onions caramelize.

Deactivate the "Skip" function. Add broccoli and kale and vegetable broth. 
Replace the cover, making sure the pressure valve is in the "Sealing" position.

Select the “Pressure Cook” mode and adjust the time, with the “- / +” at 5 minutes.

When Instant Pot beeps, use the "quick release" method to let the pressure go. Use a thick cloth while releasing the pressure or you could burn yourself from the stream.

Add the bag of spinach to the broccoli and mix it. The stream will be enough to wilt the spinach.

Now mix the soup using an immersion blender or an ordinary blender. If you are using an ordinary blender, be careful as the contents will be very hot.

Return the soup to the instant pan. Activate the "Sauté" mode.

Add the coconut milk and simmer for 5 minutes. Also check the seasoning and adjust the salt and pepper accordingly.

Serve hot with a drizzle of thick milk or coconut cream and sliced ​​nuts for texture (optional). Happy Cooking Time.
