Chocolate Zucchini Cake







This super rich and fluffy chocolate zucchini cake is topped with milk chocolate fudge frosting - you won't even taste the vegetables!

INGREDIENTS
  • 4 eggs
  • 1 tsp vanilla
  • 2 tsp (14 g) baking soda
  • 2 cups (250 g) all-purpose flour
  • 1 1/2 cups (335 g) vegetable oil
  • 1 tsp (4 g) baking powder
  • 3 cups (450 g) zucchini grated
  • 1/2 cup (350 g) chocolate simple syrup
  • 2 cups (400 g) sugar
  • 3/4 cups (95 g) unsweetened cocoa powder

INSTRUCTIONS

First, preheat the oven to 350 ° F.

Then, in a medium bowl, combine the sugar, eggs, vanilla and vegetable oil. 
Add the flour, cocoa powder, baking soda and baking powder. Mix well.

Stir in zucchini until evenly distributed.

Pour the mixture into a prepared 9x13 pan

Cook 40-50 minutes

Remove from oven, pierce with fork and drizzle with about 1/2 cup of simple chocolate syrup on top.

Allow time for the cake to set.
