Chocolate Cake Roll
Rich and
totally irresistible, this chocolate cake roll is intended for chocolate lovers
around the world.
Ingredients
- 1/4 teaspoon salt
- 3/4 cup sugar
- 3 tablespoons water
- 2/3 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon baking soda
- 4 large eggs
- 2 ounces unsweetened chocolate, melted and cooled
FILLING:
- 1/4 cup sugar
- 1 cup heavy whipping cream
- 1/4 cup slivered almonds
FROSTING:
- 1/4 cup 2% milk
- 1-3/4 cups confectioners' sugar
- 1 teaspoon vanilla extract
- 1/4 cup butter, cubed
- 2 ounces unsweetened chocolate, chopped
Instructions
First, line
a greased 15x10x1 inch. baking tray with waxed paper and grease the paper; put
aside.
Then, in a
large bowl, beat eggs at high speed for 3 minutes. Gradually add the sugar,
beating until the mixture becomes thick and lemon-colored.
Stir in
chocolate, water and vanilla. Combine flour, baking powder, baking soda and
salt; add to chocolate mixture. Spread evenly in the prepared pan.
Bake at 375
° for 10-13 minutes or until the cake comes back when lightly touched. Leave to
cool for 5 minutes.
Turn the
cake over on a kitchen towel sprinkled with icing sugar. Gently peel off the
waxed paper. Roll the cake in the style of a jelly towel, starting with one
short side. Leave to cool completely on a wire rack.
Meanwhile,
in a small thick skillet, cook the almonds over medium heat until they are
almost toasted, about 2 minutes. Sprinkle with sugar; cook and stir for 3 to 5
minutes or until the sugar is melted and golden. Spread on aluminum foil to
cool. Crush finely. In a large bowl, beat the cream until soft peaks form; fold
into pieces of crushed pralines.
Unroll the
cake; spread the filling evenly over the cake to half the edges.
Roll again.
Place the seam down on a serving platter.
For the
frosting, melt the butter and chocolate in the microwave; stir until smooth. In
a large bowl, combine the confectioners' sugar, milk and vanilla.
Add the
chocolate mixture; beat until smooth. Spread on a cake roll. Happy Cooking
