Brownie Cookie Recipe
Satisfy your
craving for chocolate with these brownie fudge cookies! They are so soft and
chewy, and the recipe is very fast and easy to make!
INGREDIENTS
- 3 large eggs
- 1/4 cup brown sugar
- 1/2 cup butter
- 1/2 teaspoon salt
- 1 tablespoon vanilla extract
- 3/4 cup all-purpose flour
- 1 cup granulated sugar
- 1/4 cup unsweetened cocoa powder¹
- 1 cup pecans (chopped, optional)
- 1/2 teaspoon baking powder
- 12 ounces bittersweet chocolate chips (60-70% cacao)
- 1/2 cup mini semisweet chocolate chips
INSTRUCTIONS
First, melt
sweet and sour chocolate chips and butter in a mild-bottomed saucepan, stirring
constantly until melted and well mixed.
Then, remove
from heat and set aside.
In the bowl
of a stand mixer equipped with a palette, beat the eggs, sugars, vanilla, yeast
and salt at high speed for 5 minutes or until the dough is thick and creamy.
This step is key, so be sure to beat the mixture for the full 5 minutes.
Reduce the
speed to a minimum and stir in the melted chocolate until you obtain a
homogeneous mixture.
Stir in the
flour and cocoa powder until a homogeneous mixture is obtained.
Add the
nuts, if you use them, and the mini chocolate chips. Incorporate to combine.
The dough should have the consistency of a thick brownie dough at this stage.
Cover the
dough and refrigerate for 30 minutes.
Preheat the
oven to 350 ° F. Line two baking sheets with parchment paper.
Using a 1.5
tablespoon cookie spoon, place the dough on the prepared cookie sheets about 2
inches apart.
Cook the
cookies 8-10 minutes. The cookie will look fixed on the edges but will stay a
bit damp looking at the center. Do not cook too much, otherwise the cookies
will not be frizzy and melting.
The crisp
and cracked crust will grow as the cookies cool on the baking sheet. Happy
