Chinese Chicken Salad






Chinese Chicken Salad






This dish certainly requires some preparation between cutting the cabbages, slicing the carrots, etc., but once everything is ready, it is very fast to start together.

INGREDIENTS

For the salad
  • 1 cup carrots shredded
  • 3 cups cooked chicken
  • 3/4 cup wonton strips
  • 1/4 cup sliced green onions plus more for garnish
  • 1 tablespoon sesame seeds
  • 1 cup purple cabbage shredded
  • 4 cups green cabbage shredded
  • 1/2 cup slivered almonds toasted

For the dressing
  • 1 tablespoon soy sauce
  • 1/4 cup hoisin sauce
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon fresh ginger finely grated
  • 2  tablespoons vegetable oil
  • 1/4 cup rice vinegar

INSTRUCTIONS

First, Place green cabbage, purple cabbage, carrots, green onions, chicken and almonds in a bowl.

For the vinaigrette: mix all the ingredients of the vinaigrette in a bowl; whisk until well blended.

Pour the vinaigrette over the cabbage mixture. Mix to coat well. Sprinkle the wonton strips and sesame seeds on the salad.

Garnish with sliced green onions and serve immediately.
